I’ve been researching some healthier cooking and baking choices for our family and was excited to try my first cookie recipe using coconut oil. I used this one shipped from Amazon and am in love. I know, healthy and chocolate chip cookies aren’t really in the same category BUT there is a better way to indulge my boys than to serve them pre-packaged store cookies. Have you seen the list of ingredients on those things?
These are hands down the ooiest, gooiest chocolate chip cookie I’ve ever made. I’m in love. And I think you will be too. There is a very, very, very slight coconut taste in the background but not enough to notice and I’m pretty sure if I didn’t know they were made with coconut oil, I would not have been able to tell. Deliciousness.
1/2 cup coconut oil
1 cup brown sugar
1 teaspoon baking powder
1/2 teaspon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
2 cups unbleached flour
1 cup mini chocolate chips
Pre-heat oven to 400. In a large bowl, use an electric mixer to beat together coconut oil, eggs, and brown sugar until very well mixed. Slowly add in vanilla and beat for 1 minute. Next, add salt, baking powder, baking soda and flour until dough forms. Stir in chocolate chips by hand. Scoop out using an ice cream scoop, filling the scoop only half way with dough (will be twice the size of a normal cookie dough drop). Bake for 9-10 minutes (do NOT bake longer than this. Trust me.) Place on a cooling rack and inhale at will
*If you don’t have coconut oil, you can use butter. But they won’t be as ooey gooey. You’ve been warned.
