Whole Wheat Banana Waffles

The other day I found some organic bananas on closeout for $0.37/lb. That was cheaper than I could grab the regular bananas for so I snatched them up. We ate most of them over the next few days, as always is with my family and then I had 2 1/2 poor bananas, withering away to sweet mushiness that needed to be rescued. Enter these absolute delicious waffles.

We made them yesterday afternoon intending on them being breakfast the next day but before I knew it, my boys had each had two, plain waffles as their afternoon snack. I can only conclude that our farm animal waffle iron had something to do with the fun and excitement of eating these waffles.

Imagine you were over for a visit. Excuse the mess. You would have heard something like this, “Waffles? Yes! I want a cow!” After handing man-child such cow, the brother demands a rooster. Both boys alternate declarations of eating “his head!” and “his feet!” I’m raising boys here people. They are a different breed. It’s ok if you just want to make circles or squares.

If you’ve never used whole wheat pastry flour before, I highly recommend it. You can use white whole wheat in place of the pastry flour if you don’t have it on hand.

1 1/2 cups whole-wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tablespoon honey
1/2 tsp pure vanilla

2 large eggs, lightly beaten (you could use just one)
3 tablespoons butter or coconut oil, melted
2 very ripe bananas, mashed
1 2/3 cups milk
fresh bananas, walnuts and 100% pure maple syrup for serving

In a small bowl, wisk together the dry ingredients (flour, baking powder, soda, salt, cinnamon, and nutmeg), set aside. In a large bowl, whisk together bananas, vanilla, honey, butter and eggs. Alternate dry ingredients and milk to the banana mixture. I like to do this in thirds. So I’ll add 1/3 of the dry ingredients, 1/3 of the milk and alternate, ending with milk and stirring until just combined.

Pour onto a very hot waffle iron, set dial to desired setting (3 is perfect for us) and enjoy with freshly sliced bananas, walnuts and pure maple syrup. Enjoy!

    Ahh!  You have to tell me where you got your waffle iron.  Love it!!  I have girls and boys, and the conversations would be about the same.  You should hear them when they are eating their poor chocolate easter bunnies.
