Roasted Rosemary Sweet Potatoes – 3 points plus

Oh these rock my world. I could eat the whole pan. Maybe I have before, hard to say :) When thinking about Thanksgiving, consider having this as both your sweet potato and stuffing side dish…at only 3 points plus per serving.
3 large sweet potatoes
1 clove garlic
2 tablespoons chopped rosemary
salt and pepper
1 tsp olive oil

Pre-heat oven to 425. Peel and dice sweet potatoes. Toss with remaining ingredients and spread evenly on a well sprayed baking sheet. Roast for 30 minutes or until edges start to brown. Serve and enjoy!

Serving size: 1/3 of pan, 3 points plus
