I saw a link to these cookies earlier in the week and was so excited to try them for this weeks Weight Watcher’s post! Unfortunately, like many of the comments, they aren’t very sweet. Looking at the ingredients you might be thinking “Duh. There’s no extra sugar!” But, never fear! I’ve jazzed it up a bit without changing the points value at all. The end result is a yummy treat to satisfy your afternoon sweet tooth and they are only 1 point each. Do yourself a favor and try them before and after the cinnamon sugar to see which version you like best.
Ingredients
3 ripe bananas
1/4 cup peanut butter
1/4 cup cocoa powder
1/3 cup unsweetened applesauce
1 tsp vanilla
2 cups quick oats (these are my favorite and cheap at Walmart)
1 tablespoon granulated sugar
1 tsp cinnamon
In a bowl mash bananas with a fork. Add in peanut butter, cocoa powder, vanilla and apple sauce until very well combined. Stir in oats and mix well. Once mixed, preheat oven to 350 and let mixture sit on counter while oven pre-heats. Drop by the teaspoon full into 30 even cookies. Bake for 10 minutes and allow to cool slightly. Pour sugar and cinnamon into a large ziploc bag, shaking to mix well. Put all cookies into the bag, shake well to coat the cookies, serve and enjoy! (makes 30 cookies)
