Tostadas – 4 points plus

One of the biggest lies about changing your lifestyle toward eating  healthy is that you have to give up your favorite foods. And even worse, that you will be forced to eat flavorless things if you want to lose weight. That my friends, is simply not true. Enter the tostada.

Oooh these are yummy. And the best part to me is that you can have a low points meal and you don’t have to compromise on flavor at all. They are super delicious and indulgent. Have two and serve with a big bowl of fresh cantaloupe to have a very filling 8 point dinner that has tons of flavor and best of all, a big crunch.

4 tostada shells
1/2 cup fat free refried beans
1/4 cup salsa
1/2 cup frozen corn
2 tablespoons diced onion
1 tsp butter or olive oil

1/4 tsp cumin
4 tablespoons sour cream 
1 cup shredded lettuce
1 tomato, chopped
1 green onion, cut up
8 tablespoons reduced fat cheese (2% variety)

In a small skillet, saute onion, 1 teaspoon butter, cumin and corn on medium low heat, about 5 minutes or until onion has softened, set aside. While corn is cooking, stir together beans and salsa, heat in the microwave (or on the stove) for 2 minutes. Heat shells in the microwave for 30 seconds and top each shell with 1 tablespoon sour cream, 1/4 cup bean mixture, 1/8 cup corn, 1/4 of the tomatoes, lettuce and green onions and top off with 2 tablespoons of shredded cheese. Sprinkle with extra salsa or freshly chopped cilantro if desired and enjoy! Makes 4 tostadas
