BBQ Chicken Pizza

Do you ever make pizza at home? If not – you definitely should! You can get crazy with it and come up with all sorts of different and delicious combinations. Here is one of our absolute favorites. I’ve made it on the crust recipe below as well as on individual flat breads you can buy in the store. This recipe is perfect for using up leftover grilled or rotisserie chicken (or roasted chicken from your freezer) from earlier in the week.

Ingredients
Toppings
2 cups diced cooked chicken
1 cup bbq sauce (or more if you like)
1 yellow or red bell pepper, sliced
1/2 onion, very thinly sliced
2 roma tomatoes. thinly sliced
1/2 cup frozen corn
4 slices bacon
2 tbs fresh parsley or cilantro, chopped
2 cups freshley shredded white cheese

Crust
2 heaping teaspoons yeast
1 cup warm water
1 teaspoon honey
1 teaspoon salt
2 tablespoons olive oil
2-1/2 cups (I used whole wheat pastry) flour plus more for rolling

Preheat oven to 425. Dissolve yeast into warm water, wait 5 minutes. Add remaining ingredients, prepare crust and let rise 30-45 minutes. After rising, punch down and roll out onto a pizza stone. I’ve found that if you put butter or oil onto your roller it will not stick to the dough. (Also, I usually cut this crust in half because we like a thin crust – your call!) Bake crust for 5-7 minutes, remove and set aside.

Dice bacon and saute in a sauce pan (if you don’t like a strong onion flavor, saute the onion with the bacon instead of using as slices to be layered later) until bacon is crispy. Place on a paper towel to remove excess grease.

Brush crust generously with sauce and top with chicken, onions, corn, tomato and pepper slices.  Top with cheese and bake for 20-25 minutes or until cheese is golden. Remove from oven and top with freshly chopped parsley or cilantro and bacon crumbles. Let cool slightly, slice and enjoy!
