Make It Yourself: Cranberry Almond Granola

This recipe was so easy to throw together and the flavor is out of this world good. If you normally buy granola at the store, stop it right now and start making this!

Ingredients

4 cups rolled oats
1 1/2 cups sliced almonds
1/4 cup coconut oil
1/4 cup honey
1/4 cup brown sugar or turbinado
1/2 tsp cinnamon
1/4 tsp salt
1 tsp vanilla
1 1/2 cups dried cranberries

Pre-heat oven to 300.

In a large bowl mix the oats, almonds, sugar, salt and cinnamon, set aside. Next, take a saucepan and warm the oil and honey (do not boil.) Once warmed through, mix in vanilla.

Pour the honey mixture over the oat mixture and stir well. Smooth mixture over a 15×10 cookie/baking sheet and bake for 40 minutes, stirring every 10 minutes. Once finished baking, cool completely and stir in dried cranberries.

This will keep for 1 week at room temperature or 3 months in the freezer and makes 7 cups.

    Is there something you can substitute for coconut oil?  I bought the other ingredients, but it was expensive for me to just “try” for this recipe.  Hope a substitute won’t change the flavor too much.  I’m anxious to try it!

      Yes, You can use any other baking oil (vegetable oil, etc).

      Don’t give up on coconut oil just yet. I love the Vitacost or Tropical Traditions brands online. The health benefits of it are out of this world! Just make sure it is extra virgin organic. I hope that helps!
