Pumpkin Pie Pancakes

It’s officially fall even if it does not feel like it in your area. I’m excited to post some fall themed food for the next few months! What better way to start than with Pumpkin Pie Pancakes. They are so, so yummy. These little rounds are like festive, Fall on a plate! You could probably do all buttermilk or all milk, this is just what I had on hand and it worked really well.

Ingredients
1 2/3 cups unbleached all purpose flour
3/4 cup milk
3/4 cup buttermilk
1/2 to 1 teaspoon pumpkin pie spice
1 tsp baking powder
1 teaspoon vanilla
1/3 cup sugar
2 eggs
2 tablespoons melted butter OR coconut oil
1 cup pure pumpkin

Stir all ingredients in a bowl, mix just until combined. Preheat a pan or griddle (definitely recommend a griddle) Pour batter onto cooking surface using a 1/3 c measuring cup or ice cream scoop. Serve warm with maple syrup and enjoy!

    Try separating your eggs and folding the beaten egg whites to the rest of the mixture and letting the entire mixture sit for about 20 minutes to let the baking powder activate. They’ll be super fluffy!
    I make extra and freeze them in wax paper and freezer bags so we can eat on them all week.
